Soup for the winter, done in the pressure cooker for fast and easy.
Ingredients:
1 cup green or brown lentils
1 cup rice
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
4 cups vegetable broth
1 can (14 oz) petite diced tomatoes
1 Tbsp Italian seasoning
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1/2 tsp ground ginger
16 oz (usually 2 cans) tomato sauce
2 Tbsp soy sauce
2 Tbsp nutritional yeast
1 tsp Worcestershire sauce
bay leaf
Directions:
- Place all ingredients in Insta-pot or other pressure cooker.
- Stir.
- Cook on high for 22 minutes.
- Allow natural release for 10 minutes.
