Slow Cooker Tailgate Chili



In the deep winter, it's still a great time for chili and slow-cooker chili! 

Ingredients:
1 tbsp olive oil
1 onion, diced
4 garlic cloves, minced
1 can (15-oz) kidney beans, drained and rinsed
1 can (14-oz) diced tomatoes
2 tbsp soy sauce
2 tbsp cocoa powder
2 tbsp nutritional yeast
2-3 tbsp chili powder
1 tbsp (vegan) Worcestershire sauce
1 tsp ground cumin
1 tsp ground cinnamon
½ tsp onion powder
½ tsp garlic powder
¼ tsp ground allspice
¼ tsp ground ginger
dash ground cloves 
1 bay leaf
1 cup dry bulgur wheat
2 cups vegetable broth 
1½ cups corn
1 cup (9-oz) salsa
4-oz guacamole

Directions:
  1. Heat oil over medium-high heat. Sauté onions and garlic until translucent.
  2. Combine onions and garlic with all ingredients except guacamole in slow cooker. 
  3. Cook on low approximately 8 hours.
  4. Remove bay leaf and season with salt and pepper.
  5. Thin with water or veg broth if necessary.
  6. Garnish with guacamole.

  • Serves 4
  • Per serving: 397 calories, 8.1g fat, 73g carbs, 21g fiber, 9.9g sugars, 16.9g protein

Bean Burrito



Who doesn't love a burrito? This is an easy recipe for a basic bean burrito. It's a great starting place for yum!

Ingredients
Two​ ​15-ounce​ ​cans​ ​black​ ​or​ ​pinto​ ​beans,​ ​drained​ ​and​ ​rinsed
Water
​ 
1
​ ​Tbsp​ ​chili​ ​powder,​ ​or​ ​to​ ​taste
1
​ ​tsp​ ​ground​ ​cumin
1
​ ​jalapeño​ ​pepper,​ ​finely​ ​chopped
6
​ ​large​ ​flour​ ​or​ ​corn​ ​tortillas​ ​(corn​ ​tortillas​ ​are​ ​smaller,​ ​so​ ​you​ ​may​ ​need​ ​more)
1
​ ​cup​ ​cooked​ ​brown​ ​rice​ ​(seasoned​ ​with​ ​salt​ ​and​ ​perhaps​ ​a​ ​squeeze​ ​of​ ​lime​ ​juice)
2​ ​cups​ ​of​ ​mixed​ ​greens
1-1/2
​ ​cups​ ​of​ ​your​ ​favorite​ ​salsa

​ ​avocados​ ​or​ ​1​ ​cup​ ​guacamole

​ ​fresh​ ​tomatoes,​ ​chopped

Directions
  1. In​ ​a​ ​saucepan,​ ​add​ ​the​ ​rinsed​ ​beans​ ​and​ ​just​ ​enough​ ​water​ ​to​ ​cover​ ​the​ ​beans.
  2. Add​ ​the​ ​chili​ ​powder,​ ​cumin,​ ​and​ ​jalapeño​ ​pepper.​ ​Cover,​ ​and​ ​heat​ ​over​ ​a low-medium​ ​flame.​ ​It​ ​should​ ​take​ ​about​ ​10​ ​minutes​ ​for​ ​the​ ​water​ ​to​ ​begin​ ​to thicken​ ​(and​ ​evaporate​ ​a​ ​bit)​ ​so​ ​that​ ​the​ ​spices​ ​become​ ​more​ ​incorporated​ ​into the​ ​beans.
  3. When​ ​the​ ​beans​ ​are​ ​heated​ ​through​ ​and​ ​thickened​ ​up,​ ​begin​ ​filling​ ​the​ ​tortillas.
  4. To​ ​make​ ​the​ ​tortillas​ ​a​ ​little​ ​more​ ​pliable​ ​(and​ ​delicious),​ ​just​ ​heat​ ​them​ ​up briefly​ ​over​ ​an​ ​open​ ​flame​ ​or​ ​in​ ​the​ ​microwave​ ​for​ ​a​ ​few​ ​seconds.
  5. Spoon​ ​a​ ​couple​ ​tablespoons​ ​of​ ​rice​ ​onto​ ​a​ ​tortilla​ ​about​ ​1​ ​inch​ ​from​ ​the​ ​bottom, and​ ​spread​ ​it​ ​out​ ​in​ ​a​ ​horizontal​ ​line.​ ​Using​ ​a​ ​slotted​ ​spoon,​ ​scoop​ ​out​ ​the​ ​beans and​ ​add​ ​a​ ​few​ ​tablespoons​ ​on​ ​top​ ​of​ ​the​ ​rice.
  6. Add​ ​the​ ​remaining​ ​toppings,​ ​such​ ​as​ ​the​ ​lettuce,​ ​salsa,​ ​avocados​ ​or​ ​guacamole, and tomatoes,.​ ​Do​ ​not​ ​overfill,​ ​or​ ​it​ ​will​ ​be​ ​difficult​ ​to​ ​roll.​ ​Begin rolling,​ ​from​ ​the​ ​bottom​ ​up,​ ​tucking​ ​the​ ​sides​ ​in​ ​as​ ​you​ ​go​ ​along.

Simple Lentil Chili

There's nothing like a bowl of soup or chili in the cold, wintry months. This simple lentil chili cooks the lentils while simmering the chili. An easy dish for the upcoming weeks between snacks and time-intensive meals.


Ingredients: 
1 onion, diced 
3-4 garlic cloves, minced 
1 bell pepper, seeded and diced 
1 qt vegetable broth 
2-3 tsp chili powder 
1/4 tsp smoked paprika 
1 1/4 cup dry lentils 
1 can (14-oz) diced tomatoes 
crackers 

Directions 
  1. Sauté onion, garlic and bell peppers until onion is translucent. 
  2. Stir in chili powder and smoked paprika to coat. 
  3. Add lentils and cook, stirring frequently, for 1 minute. 
  4. Add tomatoes (with juices) and broth. 
  5. Cover and bring to a boil. 
  6. Reduce heat to low and simmer until lentils are tender. 
  7. Salt and pepper to taste, plus more chili powder or smoked paprika if desired. 
  8. Serve with crackers or crusty bread.

  • Serves 4 
  • Takes ~40 minutes after prep

Vegetable Rice Casserole




Ingredients:
4 cups cooked brown rice 
2 zucchinis, diced 
10-oz cherry tomatoes, halved 
2 bell peppers, seeded and diced 
1 onion, diced 
2 garlic cloves, minced 
1 cup frozen corn, thawed 
½ cup fresh basil, chopped
½ cup vegetable broth 
2 Tbsp flour 
2 cups unsweetened almond milk
2 tbsp nutritional yeast 
¼ cup breadcrumbs 

Directions
  1. Cook rice if not pre-cooked. 
  2. Preheat oven to 425°F and line a baking sheet with parchment paper. 
  3. Place zucchini on baking sheet in a single layer. 
  4. Sprinkle cherry tomatoes and bell peppers over zucchini. 
  5. Bake 20-25 minutes or until zucchini is roasted and tomatoes are shriveled. 
  6. While the vegetables bake, sauté onions and garlic until translucent. 
  7. Turn off heat and add flour, stirring to evenly coat onions and garlic. 
  8. Stir in cold milk and broth. Stirring until there are no lumps. 
  9. Cover and bring to a boil, then reduce heat and simmer. 
  10. Once it starts to thicken, turn off heat and stir in nutritional yeast, plus salt and pepper. Set aside. 
  11. In a glass casserole dish, mix together cooked rice, roasted veggies, and corn. 
  12. Add sauce and mix again. 
  13. Sprinkle with basil and breadcrumbs. 
  14. Bake 25 minutes or until sauce bubbles and the top is toasty. 

Notes:
  • Total Time: 50 min  Active Time: 10 min
  • Per serving: 404 calories, 5.6g fat, 78.2g carbs, 11.3g fiber, 10.4g sugars, 15.3g protein
  • I do not suggest making this in the summer. This is too warm of a dish for that.

Slow-cooker Moroccan Chili


It's still chili season, so here is another slow-cooker chili for you. Here's a hint, I have a few of these slow-cooker chili recipes and I hope to get them all up this fall.

Ingredients:
2 baking potatoes
1 onion, diced
2-4 garlic cloves, minced
2 red bell peppers, seeded and diced
4 carrots, sliced
4 celery stalks, sliced
2 cans (15-oz ea) kidney beans, drained and rinsed
2 tbsp Ras el Hanout
2 cans (14-oz) diced tomatoes


Directions:

  1. Throw everything except the potatoes together in a 6-8 quart crock pot.
  2. Cook on low 6-8 hours until veggies are soft, the chili is warm and tasty.
  3. Meanwhile, bake your potatoes.
  4. Serve chili over potato.
Notes:
  • Serves 4
  • You can make this stove-top by sauteing the onion and garlic until translucent, adding the veggies and cooking until tender, stirring in spices to coast, then adding beans and tomatoes plus some water, cooking for about 20 minutes, stirring as needed, until warm and tasty.

Slow-cooker Sweet and Teriyaki Chili


It's the perfect time of year for slow-cooker chili. This has no right being as good as it is. You might think, "Pineapple in my chili?!" But it's oh so good.

Ingredients:
1 onion, diced
2-3 garlic cloves, minced
2 bell peppers, seeded and diced
2 tsp chili powder
1 tsp ground cumin
2 cans (15-oz ea) kidney beans (undrained)
2 cans (14-oz ea) diced tomatoes
3 cups (24-oz) frozen pineapple
2-4 tbsp teriyaki sauce
crackers 

Directions:
  1. Throw everything into a 6-8 quart crockpot.
  2. Cook on low 6-8 hours, stirring every so often.
Notes:
  • Serves 4
  • This can also be made stovetop in a large pot by sauteing the first 3 items until translucent, stir in spices to coat, then stir in remaining ingredients (not the crackers). Cook over low for 20 minutes or so until everything is warm and the flavors meld.

White Bean Minestrone




This is a great year-round soup. You can serve this warm or cold, but make sure to serve with your favorite crackers.

Ingredients:
olive oil
4 garlic cloves, minced
1 onion, diced
1 red bell pepper, seeded and diced
2 cans (15-oz ea) white beans, drained and rinsed
1 tsp Italian seasoning
1 can (14-oz) diced tomatoes
fresh basil
crackers

Directions:
  1. Heat a large pot over medium-high heat.
  2. Add olive oil, about 1 Tbsp, and allow to warm up.
  3. Sauté garlic, onion, and bell peppers until tender.
  4. Stir in Italian seasoning and cook 1 minute.
  5. Add beans and tomatoes (with juices), cover, and cook until warm throughout.
  6. Garnish with fresh basil and serve with crackers

  • Serves 4
  • Per serving (without crackers): 241 calories, 1.9g fat, 42.4g carbs, 13.6g fiber, 6g sugars, 14.1g protein

Orzo Chili



I've been loving chili. Last fall, I made chili in the crockpot every weekend. This is one of them. You can make it stovetop or in the crockpot. The only problem with pasta in the crockpot is that you slip over the done line to over-done quiet quickly. You need to watch it carefully.

Ingredients:
1 onion, diced 
3 garlic cloves, minced 
2 bell peppers seed, diced 
1 can kidney beans drain, rinsed
1 quart veg broth 
1-2 tbsp chili powder 
1-2 tbsp dried oregano 
2 cans diced tomatoes 
1 cup dry orzo 

Directions:

  1. Line a large pot with ¼-cup broth.  
  2. Add onions, garlic, and bell peppers and sauté until onions are translucent.
  3. Stir in chili powder and oregano to coat. 
  4. Add 2 cups broth, tomatoes (with juices), and orzo or rice. 
  5. Stir together, cover, and bring to a boil.  
  6. Reduce heat to low and simmer until orzo or rice is cooked, 10-40 minutes. 
  7. Stir frequently. 
  8. Check both periodically to see if additional broth is needed. 
  9. Once cooked, stir in beans plus additional broth to thin chili as desired. 
  10. Warm over low heat, if needed. 
  11. Season with salt and pepper.
  12. Ladle chili equally among 4 bowls and serve.


Notes:

  • Slow Cooker option: Combine all ingredients in a slow cooker and cook on high 3-4 hours.
  • Per serving: 383 calories, 2.3g fat, 79.4g carbs, 14.7g fiber, 19.5g sugars, 16.3g protein.

Ryan's Painful Tacos


These tacos got this name from frying the taco shells crispy and getting splattered with frying oil in the process. These are a great addition for build your own taco bar, or taco night all put together.

Ingredients:
Filling
2 Tbsp vegetable oil or corn oil                        
2 tsp vinegar (preferably apple cider vinegar)    
1 small onion, chopped (about 2/3 cup)            
3 medium cloves garlic, minced or pressed through garlic press (~1 Tb) 
2 Tbsp chili powder 
1 tsp  ground cumin            
1 tsp ground coriander 
½ tsp dried oregano 
¼ tsp cayenne pepper 
table salt 
ground black pepper 
1 pound 90% lean beef (or leaner) 
½ cup tomato sauce 
½ cup chicken broth 
1 tsp brown sugar

Shells
3/4 cup vegetable oil, corn oil, or canola oil 
8 corn tortillas (6-inch)

Toppings:
shredded cheese: Colby Jack; Mexican mix; Cheddar
diced tomatoes
chopped lettuce
corn
black beans
refried beans
salsa
guacamole
your choice

Directions:
Filling

  1. Heat oil in medium skillet over medium heat until hot and shimmering but not smoking, about 2 minutes; add onion and cook, stirring occasionally, until softened, about 4 minutes. 
  2. Add garlic, spices, and 1/2 teaspoon salt; cook, stirring constantly, until fragrant, about 1 minute. 
  3. Add ground beef and cook, breaking meat up with wooden spoon and scraping pan bottom to prevent scorching, until beef is no longer pink, about 5 minutes. 
  4. Add tomato sauce, chicken broth, brown sugar, and vinegar; bring to simmer. 
  5. Reduce heat to medium-low and simmer, uncovered, stirring frequently and breaking meat up so that no chunks remain, until liquid has reduced and thickened (mixture should not be completely dry), about 10 minutes. 
  6. Adjust seasonings with salt and pepper. 
  7. Using wide, shallow spoon, divide filling evenly among taco shells.  


Shells

  1. Heat oil in 8-inch heavy-bottomed skillet over medium heat to 350 degrees, about 5 minutes (oil should bubble when small piece of tortilla is dropped in; tortilla piece should rise to surface in 2 seconds and be light golden brown in about 1 1/2 minutes). 
  2. Meanwhile, line rimmed baking sheet with double thickness of paper towels. 
  3. Using tongs to hold tortilla, slip half of tortilla into hot oil. With metal spatula in other hand, keep half of tortilla submerged in oil. Fry until just set, but not brown, about 30 seconds. 
  4. Flip tortilla; hold tortilla open about 2 inches while keeping bottom submerged in oil. Fry until golden brown, about 1 1/2 minutes. 
  5. Flip again and fry other side until golden brown, about 30 seconds. 
  6. Transfer shell upside down to prepared baking sheet to drain. 
  7. Repeat with remaining tortillas, adjusting heat as necessary to keep oil between 350 and 375 degrees.


Notes:

  • Serves 4 
  • Per serving: 330 Cal + shell 
  • Serve immediately, passing toppings separately.

Cauliflower Samosa Tacos

... not to be confused with the previous Cauliflower Samosa Burrito, which was made slightly differently.


Ingredients
1 tomato, diced 
½” fresh ginger root, peeled 
1 garlic clove 
½ small red onion, diced 
½ tsp ground cumin 
¼ tsp paprika 
½ tsp mild curry powder 
3 cups (11-oz) cauliflower florets 
1 cooked potato, diced 
½ cup green peas
6 corn tortillas 
3 tbsp raw cashews

Directions:

  1. In a food processor or blender, puree tomatoes, ginger, and garlic. Set aside. 
  2. Line a skillet with ¼-cup water. 
  3. Sauté onions until translucent. 
  4. Stir in blended tomato mixture, ground cumin, paprika, and curry powder. 
  5. Add cauliflower and sauté until cauliflower is cooked but not mushy, about 10 minutes. 
  6. Add potatoes and peas and cook until very warm. 
  7. Taste and adjust seasonings. 
  8. Scoop cauliflower mixture onto tortillas and top with cashews.

  • Serves 2

Paradise Breakfast Burritos



I decided to make my own breakfast burritos based upon the Sin City Breakfast Tacos. We still make "crispies" and our own fried potatoes for other things on occasion. Paradise Breakfast Burritos have fresh-made tortillas and are vegan. Paradise would also be someone else making them for you and cleaning them up, or at least it's paradise when you share them.

Ingredients:
Tortillas
1 cup whole wheat flour + additional to form
2 tbsp olive oil
¼ cup water
salt

Crispies
corn tortillas, sliced into strips

Filling
canola oil
1 large potato, peeled and diced
1 large tomato, diced
1 medium white onion, diced
30 oz tofu, pressed and crumbled
1 tsp turmeric
2-4 Tbsp nutritional yeast
salt
pepper



Directions:
Tortillas
  1. Mix all the tortilla ingredients together in a bowl until combined in a large ball. Add a tad more water if the dough is too dry. 
  2. Divide into 4 smaller balls. Use additional flour on your hands to keep the dough from sticking to them.
  3. Sprinkle some flour on a flat surface and place the first ball on it.
  4. Flatten the ball using your hand.
  5. Then use a rolling pin to flatten the dough into a thin circle, about 6-8" in diameter.
  6. Heat a large pan over high heat. Once hot, place first tortilla in the pan. Watch for it to puff up, about a minute or so. Using tongs or heat-resistant fingers, flip the tortilla. Watch for more puffing.
  7. Remove from pan.
  8. Repeat steps 3-7 for all balls.
Crispies

  1. In the same pan, heat 2 tablespoons of oil in a nonstick pan on medium heat.
  2. Fry the corn tortilla strips until crispy. 
  3. Put aside on a plate lined with a paper towel. 

Filling

  1. To the same pan, add 2 more tablespoons of oil and heat (if necessary).
  2. Fry the potatoes until soft but not crispy.
  3. Add salt and pepper. 
  4. Scoop the potatoes to a plate lined with a paper towel. 
  5. If necessary, add 2 more tablespoons of oil to the same pan and heat.
  6. Add onion and tomato, and cook until onions are translucent.
  7. Add crumbled tofu, turmeric, nutritional yeast, and salt and pepper to taste.
  8. Stir to combine well, then continue to cook over medium-high heat until thoroughly warm.
Paradise Burritos
  1. Combine crispies, 1/4 fried potatoes, and 1/4 tofu mixture on a fresh tortilla. 
  2. Fold in half for a soft taco or wrap for a burrito.

  • Serves 4.
  • Approximately, 370 calories per serving.
  • Tortilla recipe adapted from Hurry the Food Up.
  • For the filling, you can make any Tofu Scramble you like.

Open Faced Sloppy Lentils


These are really great sandwiches. They weren't originally supposed to be open-faced, but I couldn't eat them in a traditional way. The other suggestion I have would be to serve the filling on hoagies.

Ingredients:
3 garlic cloves, minced
4 cups fresh spinach
2 tomatoes, diced
3/4 cups green or brown lentils
1 diced green bell pepper
1½ cups marinara sauce

8 slices of whole grain bread (or 4 hoagies)

Directions:

  1. Add lentils to a saucepan of water. Bring to boil, then reduce to low to simmer for 15-20 minutes. Drain and rinse when cooked.
  2.  Sauté garlic and red pepper flakes, if using, until fragrant. 
  3. Add spinach and tomatoes, continuing to cook until spinach turns dark green and tomatoes soften. 
  4. Stir in cooked lentils, and marinara sauce until combined. 
  5. Spoon onto bread (or hoagies) and serve.

Serves 4 sandwiches
Per serving: 403 calories, 8.2g fat, 67.7g carbs, 20.6g fiber, 13g sugars, 18.5g protein

Mediterranean Hummus Pasta


This is a nice, light spring dish. This got an approval from the family omnivores. You may not think the flavors will go together, but it's amazing.

Ingredients:
12-oz linguine
1 zucchini, half-moons
10-oz cherry tomatoes, sliced
1 red bell pepper, seeded & diced
1 cup plain hummus
1 cup fresh basil, chopped
dash dried oregano
¾ cup olives

Directions:


  1. Cook noodles via package instructions, adding zucchini, tomatoes, and bell pepper to soften and cook a few minutes before noodles are done cooking. 
  2. Drain, reserving ½-cup cooking water. 
  3. Return noodles and vegetables to pot. Set aside. 
  4. In a small bowl, whisk hummus, basil, and oregano with hot cooking water. 
  5. Pour sauce over noodles and vegetables. 
  6. Stir to coat.
  7. Serve with a side of 1/4 cup olives.

Slow Cooker Corn Tortilla Soup


It's that time of year, to get out our slow cookers and enjoy some soup as the weather cools. The original recipe came from Happy Herbivore Meal Mentor program. 

Ingredients:
8 corn tortillas  
1 onion, diced 
4 cloves garlic, minced 
1 tsp chili powder 
1 tsp dried oregano 
2 tsp ground cumin 
2 cups (16-oz) vegetable broth 
14-oz diced tomatoes 
2-oz diced green chiles, drained 
¼ cup tomato paste 
2 tbsp low-sodium soy sauce 
1.5 cups prepared black beans (1-15 oz can, drained and rinsed) 
1 avocado 
hot sauce, cilantro (optional)

Directions:
  1. Combine onion, garlic, spices, broth, tomatoes (with juices), chiles, tomato paste and soy sauce in a slow cooker. 
  2. Tear or chop 4 corn tortillas and stir into slow cooker to combine. 
  3. Cook on low 6-8 hours (high 3-5 hours). 
  4. Optional: Once done, transfer half to a blender and whiz until smooth OR use an immersion blender to partially blend. 
  5. Add beans, stirring to combine.
  6. Preheat oven or toaster oven to 350F. 
  7. Place 4 corn tortillas directly on the wrack and until crispy, about 5 minutes.
  8. Crumble cooked tortillas into separate bowl.
  9. Spoon soup into serving bowls and top with crumbled crisped tortillas and avocado. 
  10. Garnish with hot sauce and cilantro. (optional)
Notes:
  • Serves 4.

  • You could add corn to the soup as well.

KTTA aka BLTA



This is a great compliment to an ear of corn on the cob. Recipe is based off a meal from the Happy Herbivore Meal Mentor

Ingredients:
water
liquid smoke
1/2 tsp Worcestershire sauce
1/2 tsp pure maple syrup
3-4 oz extra-firm tofu, sliced into 3
2 slices bread
1 cup kale, chop
1 tomato, sliced
2-oz guacamole

Directions:

  1. Toast bread (optional.)
  2. Spread guacamole on bread slices.
  3. Add 1/4 cup water, a tad of liquid smoke, Worcestershire sauce, and maple syrup to a skillet. Whisk together.
  4. Ad tofu and cook over medium heat, turning regularly, until it starts to caramelize. This is now the "bacon" part of a BLTA.
  5. Make sandwich with kale, tomato slices, and tofu "bacon".


Notes:

  • Serves 1.
  • Original recipe called for one portabello mushroom stemmed and sliced instead of tofu.
  • Original recipe per serving: 384 calories, 12.5g fat, 58.1g carbs, 12.9g fiber, 15.6g sugar, and 12.7g protein.
  • You can use a gluten-free tortilla instead of bread and make a wrap.
  • You can use hummus instead of guacamole.

Caesar Taco Salad


This is an everybody-approved salad. It's delicious! I got the recipe from Happy Herbivore Meal Mentor. This is a great salad as a side or main dish.

Ingredients:
1 tbsp low-sodium soy sauce 
2 tsp fresh lemon juice 
2 tbsp taco seasoning 
1.5 - 2 cups chickpeas  
2 corn tortillas 
1 head romaine lettuce, chopped 
5-oz cherry tomatoes, sliced 
2-oz guacamole

Caesar Dressing 
½ cup yogurt 
1 tbsp fresh lemon juice 
1 tbsp Dijon mustard 
1½ tsp Worcestershire sauce 
garlic powder

Directions:
  1. Preheat oven to 375F.
  2. Make dressing by whisking all ingredients together until well combined, adding garlic powder to taste. 
  3. Chill until using.
  4. Combine soy sauce, lemon juice, taco seasoning and chickpeas, stir to coat.
  5. Place on parchment-lined baking sheet, and bake 20-25 minutes, until crispy but not hard. 
  6. During last 5-10 minutes, place tortillas right on the rack and bake until crispy. 
  7. In a large mixing bowl, toss chickpeas with lettuce and cherry tomatoes. 
  8. Pour dressing over top, and toss to coat. 
  9. Crumble corn tortillas over the top. 
  10. Top with guacamole.
Notes:
  • Serves 2.
  • Per serving: 418 calories, 8.6g fat, 63.4g carbs, 12.7g fiber, 9.1g sugars, 19.2g protein

Sweet Tomatoes Bowl


This was amazing. I really like lentils, and there is a fabulous flavor combination here. I got the original recipe from Happy Herbivore Meal Mentor

Ingredients:
water
1 zucchini, sliced in half moons 
1-2 tbsp Taco Seasoning 
5-oz cherry tomatoes, or grape tomatoes, or combo of small tomatoes, sliced 
⅓ cup corn 
¾ cup cooked lentils 
¼ cup salsa 

Directions:

  1. Heat a skillet, and add ¼-cup water. 
  2. Add zucchini and Taco Seasoning. 
  3. Cook for a few minutes, until zucchini is just becoming tender. 
  4. Add tomatoes and cook until the tomatoes start to soften. 
  5. Add corn and cooked lentils. 
  6. Continue to cook until vegetables reach desired tenderness, stirring constantly and adding water as needed. 
  7. Top with salsa and serve.

  • Serves 1
  • Per serving: 386 calories, 1.7g fat, 72.2g carbs, 27.1g fiber, 11.6g sugars, 24.6g protein
  • You can add hot sauce if you like.

Green Bean-Potato Salad


If you do Meatless Mondays, how about Salad Mondays? I am such a fan of Happy Herbivore Meal Mentor salads. I put salads as sides, because that's how many folks think of them, but this could be eaten as an entree, which is what I did.

Ingredients:
½ cup corn 
1½ cups fresh green beans, cut into 1” pieces 
½ cup dry couscous or 2 1/2 cups cooked quinoa
2 cooked potatoes, diced 
1 tomato, diced 
½ cup fresh basil, chopped 
1 tbsp fresh oregano, chopped 

Lemon Dressing 
2 tbsp vegetable broth 
1 tbsp fresh lemon juice 
1 tbsp red wine vinegar 
garlic powder 
½ tsp agave nectar
salt and pepper, to taste

Directions:

  1. Make Dressing: Whisk ingredients together. Taste, adding more garlic as desired plus salt and black pepper.
  2. Warm or thaw corn if frozen. Set aside. 
  3. Bring a large pot of water to a boil. Add green beans and cook 5 minutes or until tender but still crisp. 
  4. Pour ⅔-cup of the hot water over couscous in a mixing bowl and set aside. 
  5. Drain green beans and immediately rinse under cold water, until they're cool.
  6. After 5 minutes of soaking couscous in hot water, fluff couscous. 
  7. In a large bowl, toss fluffed couscous with potatoes, green beans, tomatoes, corn, basil, and oregano. Toss with dressing until well mixed.

Notes:

  • If serving as entree, serves 2.
  • Per serving: 380 calories, 1.4g fat, 81.9g carbs, 11.3g fiber, 6.3g sugars, 12.8g protein
  • Can add white beans or chickpeas.

Tomale Pie


If you know me and my family, you might be as surprised as I am for something called "Tomale Pie" to make it onto the Codex. It was one of the meals from the Happy Herbivore Meal Mentor. I changed some of the measurements to be less spicy.

Ingredients:
oil
6 tbsp fine cornmeal
1/2 small onion, diced
1 garlic clove, minced
1/2 tsp ground coriander
1/4 tsp chili powder
1/2 tsp ground cumin
15-oz can black beans, drained and rinsed
3/4 cup corn
1 tbsp diced green chilies
7-oz diced tomatoes

Directions:

  1. Make polenta: Bring 3/4-cup water to a boil. Reduce to low. Slowly whisk in cornmeal, stirring to break down clumps. Add more hot water (about 1/4-cup) to thin out. Salt to taste.
  2. Preheat oven to 375F and set aside a square 8 or 9-inch glass casserole dish.
  3. Heat a large pot over medium heat. Add oil and saute onion and garlic until translucent.
  4. Add spices, stirring to coat well, and cook another minute.
  5. Add beans, corn, green chilies, and tomatoes.
  6. Mix well and cook for a minute or so, then transfer to the casserole dish. 
  7. Spread polenta mixture on top and bake 30 minutes, or until polenta is firm.
  8. Allow to cool for 15 minutes while the polenta firms. 


Notes:

  • Serves 2.
  • Per serving: 387 calories, 3.8g fat, 70.1g carbs, 15.6g fiber, 6.7g sugar, 19.5g protein.
  • If you like spice, double the chili powder to 1/2 tsp, and add as much as 2-oz of diced green chilies. You can pour hot sauce on top, too.
  • Top with guacamole or sliced olives for more flavor.
