This is a great meal in the summer or in the winter or any season. When do you light off your firecrackers?
Ingredients:
12-oz dry noodles (e.g. bow-tie firecrackers)
16-oz frozen stir-fry vegetables
1 cup lite coconut milk
1 cup unsweetened almond milk
2-3 tbsp red curry paste
1-2 tbsp low-sodium soy sauce
Directions:
- Cook noodles according to package instruction, adding stir-fry vegetables 2-4 minutes before the noodles are done to cook briefly.
- Drain and rinse under cool water then return to pot.
- While the noodles and veggies cook, in a small bowl, whisk together remaining ingredients starting with 2 tbsp curry paste and 1 tbsp soy sauce.
- Pour over cooked noodles and vegetables, stirring to combine.
- Heat over low until thoroughly warm.
- Taste, adding more curry paste, soy sauce, and/or Sriracha as desired.
