Ingredients:
1 onion, diced
3-4 garlic cloves, minced
1 bell pepper, seeded and diced
1 qt vegetable broth
2-3 tsp chili powder
1/4 tsp smoked paprika
1 1/4 cup dry lentils
1 can (14-oz) diced tomatoes

Directions
- Sauté onion, garlic and bell peppers until onion is translucent.
- Stir in chili powder and smoked paprika to coat.
- Add lentils and cook, stirring frequently, for 1 minute.
- Add tomatoes (with juices) and broth.
- Cover and bring to a boil.
- Reduce heat to low and simmer until lentils are tender.
- Salt and pepper to taste, plus more chili powder or smoked paprika if desired.
- Serve with crackers or crusty bread.
