Breakfast: Good Old Fashioned Pancakes

We discovered these pancakes one night when our usual pancake maker (my husband) was unable to do the cooking and I needed to find a quick and easy pancake recipe. Indeed, this is a quick and easy recipe. We always double the recipe, and so the doubled recipe is given below.


Ingredients:

3 cups all-purpose flour
2 tablespoons and 1 teaspoon baking powder
2 teaspoons salt
2 tablespoons white sugar
2-1/2 cups milk
2 eggs
1/4 cup and 2 tablespoons butter, melted


Directions:

  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

  1. A comment on my facebook promotion of this recipe was how similar it is to one that person preferred - with the exception of theirs had buttermilk. In my recipe codex, we actually call this quick and easy pancakes. The night I made these the first time, I was looking for a recipe I could make with the stuff I had already. Milk, eggs, flour, salt, sugar, butter, and baking powder are staples in my house. Buttermilk because of how quickly it expires is not. I have other, not as quick nor easy, pancake recipes, which will be posted eventually.
