Torta Sbrisolona



Back in 2011, I made a Torta Sbrisolona, and we really liked it. It was supposedly a dessert, but we treated it more like a sweet bread - one that you might eat for breakfast or with tea or in a cafe. Again, it was another recipe that used animal products, so I no longer could eat it. Given that the remaining child at home had the same exact complaints (it has nuts and is crunchy), but the adults loved it, I'd say my vegan version is a success!



Ingredients:

3 Tbsp ground flax meal
1/2 cup water
1 tbsp vanilla extract

2 cups whole wheat flour
2/3 cup medium yellow cornmeal (I used Bob's Red Mill medium cornmeal)
2/3 cup fine yellow cornmeal (I used Alber's cornmeal)
1 cup chopped almonds
1 cup caster sugar or baker's sugar
finely grated zest of 1 lemon
1 cup vegan butter, cubed, plus extra for greasing

sifted icing or powdered sugar for dusting


Directions:

  1. Whisk the 3 tablespoons flax meal with 1/2 cup water and 1 tablespoon vanilla. Place in refrigerator for 15 minutes.
  2. Heat the oven to 350ºF and grease a 10 in round or square cake pan. 
  3. In a very large mixing bowl (minimum 6 quarts, bigger is better), combine the plain wheat flour, the two cornmeals, plus the almonds, sugar and lemon zest.
  4. Use your fingertips to rub the butter into the dry ingredients until the mixture resembles breadcrumbs.
  5. Make a well in the center of the flour mixture and pour in the flax and vanilla mixture. 
  6. Give it a brief stir, then quickly finish working the dry ingredients into the wet using your hands to give a solid, pastry-like dough. Do not knead the dough; work it until it only just comes together.
  7. Press the dough into the prepared pan to no more than 1" - 1 1/2" depth. Smooth the surface over a little but leave it dimpled as this will enhance the crumbly texture. 
  8. Bake for 35-45 minutes until the top is just starting to brown. 
  9. Leave the cake to cool in the pan. 
  10. Dust with sifted icing sugar and break into chunks to serve.


Other details:

  • Serves 8-12.
  • This cake is traditionally smashed in the center to be devoured in crumbling chunks with sticky wines or grappa.
  • Hazelnuts are sometimes used in place of, or in conjunction with, the almonds.

Whole Wheat Chocolate Chip Cookies


Another version of these same whole wheat chocolate chip cookies. Yum!

Ingredients
3/4 cup sugar 
3/4 cup packed brown sugar 
1 cup Earth Balance (2 sticks), softened 
1 teaspoon vanilla 
1/4 cup applesauce
2 cups whole wheat flour 
1 teaspoon baking soda 
1/2 teaspoon salt 
1 pkg (12 oz) semisweet chocolate chips

Directions

  1. Heat oven to 375.  
  2. Mix sugars, butter, vanilla, and egg in large bowl.  
  3. Stir in flour, baking soda and salt.  
  4. Stir in chocolate chip cookies.  
  5. Form 1-2" balls of dough and drop about 2” apart onto ungreased cookie sheet.  
  6. Bake approximately 10 min or until light brown. 
  7. Cool slightly until you can remove from sheet without disturbing cookie shape; remove from cookie sheet.  
  8. Cool on wire rack.            


Notes:

  • Makes ~3 dozen. 
  • Prep: 10 min           
  • Total: 20 min 
  • You may want to use less than the entire package of chocolate chips.

Paradise Breakfast Burritos



I decided to make my own breakfast burritos based upon the Sin City Breakfast Tacos. We still make "crispies" and our own fried potatoes for other things on occasion. Paradise Breakfast Burritos have fresh-made tortillas and are vegan. Paradise would also be someone else making them for you and cleaning them up, or at least it's paradise when you share them.

Ingredients:
Tortillas
1 cup whole wheat flour + additional to form
2 tbsp olive oil
¼ cup water
salt

Crispies
corn tortillas, sliced into strips

Filling
canola oil
1 large potato, peeled and diced
1 large tomato, diced
1 medium white onion, diced
30 oz tofu, pressed and crumbled
1 tsp turmeric
2-4 Tbsp nutritional yeast
salt
pepper



Directions:
Tortillas
  1. Mix all the tortilla ingredients together in a bowl until combined in a large ball. Add a tad more water if the dough is too dry. 
  2. Divide into 4 smaller balls. Use additional flour on your hands to keep the dough from sticking to them.
  3. Sprinkle some flour on a flat surface and place the first ball on it.
  4. Flatten the ball using your hand.
  5. Then use a rolling pin to flatten the dough into a thin circle, about 6-8" in diameter.
  6. Heat a large pan over high heat. Once hot, place first tortilla in the pan. Watch for it to puff up, about a minute or so. Using tongs or heat-resistant fingers, flip the tortilla. Watch for more puffing.
  7. Remove from pan.
  8. Repeat steps 3-7 for all balls.
Crispies

  1. In the same pan, heat 2 tablespoons of oil in a nonstick pan on medium heat.
  2. Fry the corn tortilla strips until crispy. 
  3. Put aside on a plate lined with a paper towel. 

Filling

  1. To the same pan, add 2 more tablespoons of oil and heat (if necessary).
  2. Fry the potatoes until soft but not crispy.
  3. Add salt and pepper. 
  4. Scoop the potatoes to a plate lined with a paper towel. 
  5. If necessary, add 2 more tablespoons of oil to the same pan and heat.
  6. Add onion and tomato, and cook until onions are translucent.
  7. Add crumbled tofu, turmeric, nutritional yeast, and salt and pepper to taste.
  8. Stir to combine well, then continue to cook over medium-high heat until thoroughly warm.
Paradise Burritos
  1. Combine crispies, 1/4 fried potatoes, and 1/4 tofu mixture on a fresh tortilla. 
  2. Fold in half for a soft taco or wrap for a burrito.


Notes:

  • Serves 4.
  • Approximately, 370 calories per serving.
  • Tortilla recipe adapted from Hurry the Food Up.
  • For the filling, you can make any Tofu Scramble you like.

Whole Wheat Chocolate Chip Cookies


Yum! These cookies are so easy to make. Throw in the wet stuff, mix, throw in the dry stuff, mix, put on cookie sheet, bake for 10 minutes, cookies! Also, I made two different types. I made the original recipe and these. The omnivore family went by and couldn't tell the difference between the two. 

Ingredients
3/4 cup sugar 
3/4 cup packed brown sugar 
1 cup Earth Balance (2 sticks), softened 
1 teaspoon vanilla 
1 Ener-G egg 
2 cups whole wheat flour 
1 teaspoon baking soda 
1/2 teaspoon salt 
1 pkg (12 oz) semisweet chocolate chips

Directions

  1. Heat oven to 375.  
  2. Mix sugars, butter, vanilla, and egg in large bowl.  
  3. Stir in flour, baking soda and salt.  
  4. Stir in chocolate chip cookies.  
  5. Form 1-2" balls of dough and drop about 2” apart onto ungreased cookie sheet.  
  6. Bake approximately 10 min or until light brown. 
  7. Cool slightly until you can remove from sheet without disturbing cookie shape; remove from cookie sheet.  
  8. Cool on wire rack.            


Notes:

  • Total: 20 min

WW Chocolate Chip Cookies


These were in the digital but offline codex, so I made them again for my omnivore family. The only complaint I got was that there were too many chocolate chips. You can use the entire bag, or add them slowly, stopping when you get to a point you prefer.

Ingredients
3/4 cup sugar 
3/4 cup packed brown sugar 
1 cup butter, softened 
1 teaspoon vanilla 
1 egg 
2 cups whole wheat flour 
1 teaspoon baking soda 
1/2 teaspoon salt
1 pkg (12 oz) semisweet chocolate chips

Directions:  

  1. Heat oven to 375 degrees.  
  2. Mix sugars, butter, vanilla, and egg in large bowl.  
  3. Stir in flour, baking soda and salt (dough will be stiff).  
  4. Stir in chocolate chip cookies.  
  5. Drop dough by rounded tablespoonfuls about 2” apart onto ungreased cookie sheet.  
  6. Bake 8-10 min or until light brown (centers will be soft.) 
  7. Cool slightly; remove from cookie sheet.  
  8. Cool on wire rack.            


Notes:


  • Prep: 10 min           
  • Total: 20 min
  • Makes 3 dozen.

Multigrain Biscuits






In my effort to make things I enjoy so that I will choose to eat them again, I decided to make my Homemade Multigrain Biscuit Mix.


Ingredients:
For mix:
1 cup whole wheat pastry flour
1 cup spelt flour 
1 cup cornmeal
1/2 cup rolled oats 
1/2 cup wheat germ 
1/2 cup powdered coconut milk
2 tablespoons baking powder
1/4 cup stevia
2 teaspoons salt
1/2 cup cold vegan buttery sticks, (short time in freezer helps) 

For biscuits:
1 cup biscuit mix
1/4 cup water or more
1 tablespoon unsweetened vanilla almond milk, optional

Directions:

  1. For the biscuit mix, in a large bowl, mix the flours, cornmeal, rolled grains, milk powder, baking powder, stevia, and salt. When well combined use a grater to shred the cold butter or margarine into the bowl, tossing with the flour to coat. Squeeze the mixture in handfuls to break up the butter or margarine into small pieces. Store in zipper-top bags in the refrigerator or freezer. 
  2. (If frozen, measure what you want to use and let it come to room temperature for an hour before proceeding.)
  3. To make 4 biscuits, preheat the oven to 450ºF. Measure 1 cup of the mix into a large bowl. Quickly stir in 1/4 cup water or enough just to moisten; don't overstir. Flatten the dough in the bottom of the bowl and cut it into 4 wedges. Transfer the biscuits to an ungreased baking pan. Brush the tops with milk (if desired), and bake for 8-10 minutes. Serve hot.


Other Details:

  • Makes 5 cups biscuit mix, enough for about 20 biscuits. 
  • Subsitutes: kamut flour for spelt flour; rolled oats = rolled rye = rolled barley; wheat germ = rolled quinoa; almond milk = any milk. Use gluten-free flours for gluten free option. powdered coconut milk = soy protein powder.
  • According to My Fitness Pal, nutrition per biscuit is 149 Calories, 19g carbs, 7g fat, 3g protein, 2g fiber.

Scotch Oat Cake with Broiled Brown Sugar Topping (vegan)



Where to put this? It's cake, so that implies dessert. But, it's like a coffee cake in that you would serve this crumbly confection with coffee. Does that mean it's breakfast or bread? I'll keep it as a dessert. 

I based this off a cake I made several years ago. I made the recipe vegan, and I altered some of the ratios. Very tasty. I brought it to work so that I would not eat the entire thing myself. Nearly every person I gave a piece to said how good it is. 


INGREDIENTS:

1 cup apple juice
2/3 cup Scotch oats or steel-cut oats or bulgur wheat
1 2/3 cups whole wheat pastry flour
1 teaspoon baking soda
1 cup brown sugar or raw sugar
1/2 teaspoon salt
1/2 Tbsp lemon juice
1/2 cup almond milk
1/4 cup canola oil
1 1/2 teaspoons vanilla extract

Topping:

3 tablespoons vegan stick butter, melted
1/2 teaspoon vanilla extract
1/2 cup brown sugar
pinch of salt
1/2 cup chopped walnuts

Directions:


  1. In a small saucepan, bring the apple juice to a boil, then add the oats or bulgur. Return to a boil, then cover and reduce the heat to a simmer. Cook for 10 minutes. Take the pan off the heat and let cool, uncovered. 
  2. In a medium bowl, mix lemon juice with almond milk. Let sit for 5-10 minutes.
  3. Preheat the oven to 350ºF. Oil a 9-inch square baking dish.
  4. In a large mixing bowl, whisk the flour, baking soda, brown sugar, and salt. 
  5. In the medium bowl add oil, vanilla, and oat mixture to the milk mixture. 
  6. Mix into the dry ingredients, stirring until well mixed. Scrape the mixture into the prepared pan. 
  7. Bake for 30 to 35 minutes, until the top is golden and a toothpick inserted into the center comes out clean.
  8. While the cake bakes, make the topping. In a small bowl, mix the melted butter, vanilla, brown sugar, salt, and walnuts. When the cake is done, place it on a cooling rack. 
  9. Turn the oven to broil, and put a rack 4 to 5 inches from the heat. Drop spoonfuls of the brown sugar topping over the cake, spreading it gently and leaving 1/2 inch bare around the edges. 
  10. Broil with the door open, watching closely, just a minute. When the topping is bubbling and melted, take it out to cool. 
  11. Serve warm, after the topping has set.

Chocolate Chunk Buckwheat Cookies (Vegan)







I made a version of these before. These are a vegan adaptation of them. I think these turned out better. The top photo is of the dough on the pan, and the bottom is of finished cookies cooling on the rack. They are yummy warm or cooled. They are yummy two days later. 




Ingredients:

1/2 cup vegan stick butter, softened
1 cup brown sugar
1 tbsp ground flax seed

3 tbsp water
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1 cup plus 2 tablespoons whole wheat pastry flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buckwheat groats
6 ounces semisweet chocolate, chopped into 1/2 inch chucks


Directions:

  1. Preheat over to 375°F.
  2. Make flax egg by mixing 1 tbsp ground flax seed with 3 tbsp water in a small bowl. Put into fridge for 15 minutes. It should then have an egg consistency.
  3. In a stand mixer or bowl, cream the butter and brown sugar until light and fluffy. Beat in the egg, vanilla, and almond extract until well mixed.
  4. In a small bowl, mix the flour, baking soda, salt and buckwheat, and add to the butter mixture, beating to incorporate. When the flour is mixed in, add the chocolate and stir until combined.
  5. Drop 2-tablespoon-size balls of dough onto ungreased sheet pans, leaving 3 inches of space between the balls. The cookies will spread while baking.
  6. Bake for 6 minutes, reverse the position of the pans in the oven, then bake for 4 to 6 minutes more. A pale, soft center surrounded by golden brown cookie is the desired result.
  7. Let the cookie cool on the pans for 5 minutes, then transfer to cooling racks with a spatula. Let cool completely before storing in an airtight container for up to a week.

Strawberry Shortcake Cupcakes


These cupcakes are too good to be true. Get yourself some fresh strawberries to top these. I got the original recipe from Happy Herbivore Meal Mentor. They were enjoyed by everybody in the house.

Ingredients:
2 cups whole-wheat pastry flour
1 tsp baking powder
½-tsp baking soda
½-tsp fine salt
¼-cup applesauce
1 cup raw sugar
1 cup almond milk
1 tsp lemon extract
sliced strawberries

Icing
1 cup powdered sugar
1 tbsp almond milk
1 tsp vanilla extract
red food coloring

Directions:

  1. Preheat oven to 350F. 
  2. In a medium bowl, whisk flour, baking powder, baking soda, and salt together. 
  3. In a large bowl, whisk applesauce, raw sugar, almond milk, and lemon extract until well combined. 
  4. Pour dry mixture into wet mixture in 3 to 4 batches, stirring until just combined. 
  5. Bake in lined muffin cups for 15-25 minutes or until a toothpick inserted in the center comes out clean. 


Icing

  1. Whisk powdered sugar, almond milk, vanilla extract, and a drop of red food coloring in a small bowl, adding more sugar to thicken or more milk to thin it out. 
  2. Once the cupcakes have fully cooled, slather icing over top and garnish with fresh strawberry slices.

Bread: Carol's Sweet Rolls & Ryan's Honey Wheat Version

My mother-in-law makes sweet buns that are fantastic and are a staple of the holiday season. A holiday season a few years ago, the husband acquired her sweet bun recipe. His are not quite the same as hers, and because we like whole wheat bread better, he adjusted the recipe for a honey wheat version. The recipe posted here is what the husband makes, with the honey wheat variation given at the end (in a very non-exact way). Enjoy!
Carol's Sweet Roll

Honey Wheat Sweet Buns

Carol's Sweet Rolls
Ingredients:
1 yeast packet in ¼ cup water
1 cup sugar
½ stick butter, melted
2 eggs beaten
1 teaspoon salt
2 cups lukewarm water
7 cups flour

Directions:

  1. Prepare the yeast in warm water according to yeast packet temperature directions.
  2. Mix the sugar and salt into 4 cups of flour. '
  3. Mix the butter, eggs, and water. Check to be sure the temperature of the wet ingredients is within 80-90ºF.
  4. Mix the yeast and wet ingredients into the flour mixture.
  5. Using the dough hook, knead to mix. Add 1 cup of remaining flour at a time, kneading to fully mix until all flour has been added.
  6. Let dough raise in an oiled bowl in a warm location, covered by a tea towel, until it has doubled in size.
  7. Oil heavy sheet pan. Preheat oven to 350ºF. Tear off small handfuls of dough. Roll each piece into a ball, and place on the oiled pan.
  8. Let rolls raise in a warm location covered until rolls have grown to adequate size. At least 30 minutes, an hour is better.
  9. Bake for 15-20 minutes, until golden brown.
  10. Remove from pan onto racks and brush with melted butter.


Ryan's Honey Wheat version of Carol's Sweet Buns
Ingredients and Directions:
Use whole wheat flour and honey. Top with rolled oats.

Other Notes:

  • Makes a few dozen rolls. 
  • For sweeter buns, don't add the sugar until after all the flour has been added.

Dessert: Whole Wheat Chocolate Chip Cookies

What do you do when you have to provide cookies and only have whole wheat flour? Find a recipe for chocolate chip cookies that uses only whole wheat flour. At some point several years ago, I was to provide cookies for a child's class and I found this recipe somewhere on the internet.

Ingredients:

3/4 cup sugar
3/4 cup packed brown sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
1 egg
2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 pkg (12 oz) semisweet chocolate chips (2 cups) (using mini-chips is even better!)

Directions:
  1. Heat oven to 375o.  
  2. Mix sugars, butter, vanilla, and egg in large bowl.  Stir in flour, baking soda and salt (dough will be stiff).  Stir in chocolate chip cookies.  
  3. Drop dough by rounded tablespoonfuls about 2” apart onto ungreased cookie sheet.  
  4. Bake 8-10 min or until light brown (centers will be soft.) 
  5. Cool slightly; remove from cookie sheet.  Cool on wire rack.
